1 c. milk
1 c. flour
1 c. sugar
Zest of 1 lemon
2 t. baking powder
1/2 t. salt
Melt the butter and pour into the bottom of a 9x13 pan. Spread around evenly over the bottom of the pan. In a bowl combine the egg, milk, flour, sugar, zest, baking powder and salt until combined. Pour the mixture over the top of the butter. Do NOT stir the batter into the butter. Sprinkle the berries evenly over the top of the batter:
1 1/2 c. strawberries, sliced
2 c. fresh blueberries
In the same bowl the batter was in, combine:
8 oz. cream cheese, softened
1/4 c. sugar
Cream together until smooth. Place a quarter size of the cream cheese mixture evenly over the top of the berries. Do this all over the top of the berries.
Bake the cobbler at 350 for 45 minutes, or until the top is lightly golden brown.
Serve the cobbler warm or cold with vanilla ice cream or real whipped cream and more fresh blueberries and strawberries.
Here is what the cobbler looks like before you put it in the oven. You can see the melted butter on the bottom coming up around the sides and the cream cheese dollops on top of the berries. A little different method, but it gives amazing results ;)
