Banana Crunch Cake

This time of year I am always on the look out for simple, and tasty recipes I can bring to family gatherings. My aunt gave me this recipe for Banana Crunch Cake and we all LOVED it! It is sweet, moist, flavorful and full of buttery goodness. The layers of the crunch between the moist cake was a perfect combination. Top with a dallop of whipping cream and you have a festive fall dessert that will please all of your family & friends!


Banana Crunch Cake
Crunch:
1 c. coconut
1 c. oatmeal
1/2 c. chopped nuts
1/2 c. butter, melted
1 1/2 c. brown sugar
1/2 c. flour
Combine & set aside.
1 yellow cake mix
4 eggs
1/2 c. sour cream
3 ripe bananas (about 1 1/2 c. mashed)
Layer 1/3 of crunch on bottom, 1/2 cake & 1/3 crunch
Bake at 350 for 50-55 minutes, or until light golden brown and cooked through.

Wondering do you end up using the whole cake mix in layering it or only 1/2 cake mix?
